Butterscotch Pudding with Rum Jelly

  • Butterscotch Pudding (see note above)
  • 2 teaspoons unflavored gelatin
  • 2 tablespoons water
  • 1/2 cup golden or aged rum
  • 3 tablespoons sugar
  • Water to equal 1 1/3 cups

How to Make It

  1. Make pudding and chill until set.
  2. Sprinkle gelatin over water in a small bowl; let stand 5 minutes.
  3. Combine rum, sugar, and enough water to equal 1 1/3 cups; bring to a simmer in a small saucepan, stirring just until sugar dissolves. Stir in gelatin mixture; heat over medium-low heat just until gelatin dissolves. Cool slightly; pour about 1/4 cup gelatin mixture over each serving of pudding. Chill until set.
