Cooked dried black beans provide the wow factor in this simple dip; you could serve the blended beans alone and guests would swoon over the rich, full-bodied flavor. Use leftover dip as a spread for sandwiches or burritos, or stir into a bean soup or chili for added body. For extra heat, add a seeded chopped jalapeño to the food processor with the beans. Plantain chips are a colorful, crunchy, grain-free alternative to tortilla chips, though you can use any dippers you like. Serve the dip in a wide bowl so everyone can dig into the fresh toppings.
Place black beans, 1/4 cup cooking liquid, juice, and salt in a food processor; process until smooth. Add remaining 1/4 cup cooking liquid to processor, 1 tablespoon at a time, pulsing after each addition until dip reaches desired consistency. Place black bean mixture in a bowl; top with tomato, green onions, and cheese. Serve with plantain chips.
