Native to southeast Asia, the large spiky fruit has an easy-to-shred texture that mimics foods like shredded chicken or pork. Perfect for Tex-Mex dishes like BBQ Nachos or Jackfruit Taquitos, the low-calorie fruit is also at home in comforting dishes like Potpie or Vegan 'Chicken' Noodle Soup. Be sure to buy canned jackfruit in brine, as jackfruit that's packed in syrup will give the wrong taste and texture for these recipes. It's available for purchase in Asian markets and some health food stores.
