¼ cup COLAVITA Extra Virgin Olive Oil
¼ cup apple juice
4 tablespoons Dutch processed cocoa
1 cup brown sugar
2 egg whites
1 teaspoon vanilla extract
1 cup chopped nuts (optional)
1 cup all-purpose flour
¼ teaspoon baking powder
½ cup semi-sweet or chocolate morsels
Preheat oven to 325 degrees. Using a paper towel or spray bottle, oil an 8X8 inch baking dish. In a medium bowl combine oil, apple juice, egg, egg whites, sugar and cocoa. Mix until well blended. Add nuts to batter (if using) and mix to combine. In a separate bowl, combine the flour and baking powder, add a pinch of salt; mix well. Combine with the wet ingredients and stir to incorporate until just blended. Do not over mix. Sprinkle chocolate chips over top; bake 30 minutes.
