Three Things You Shouldn't Miss in the May Issue

If you're reading this post, you made it to the weekend. We should all take this moment to smile, sigh collectively, and look forward to two whole days of productivity (or the opposite).

Free time on the weekend offers many perks. Some of us will spend time with our families, do yard work, maybe catch up on Game of Thrones before this Sunday's episode, which I can tell you from reading the books is bound to be a doozy, or spend some time in the kitchen creating a little culinary bliss. In honor of our new May issue (now available on newsstands, iPhone, and tablets!), here are my three favorite recipes to look out for when you flip (or swipe) through your new issue. Plus, learn about the bonus recipes you get when you download the digital version of the magazine. Bonus recipes… talk about a weekend perk, right? Cheers, and have a happy weekend!

1. Roasted Pork Tenderloin Tacos: Succulent, tender pork, crunchy jalapeño, and creamy avocado make for one delicious taco that's good at lunch or dinner any day of the week. Like every other recipe in our May issue, you can have these tacos from kitchen-to-table in 25 minutes or less. Make it a Mexican Monday, Taco Tuesday, or Tortilla Thursday. Regardless of what type of weekday alliteration you may prefer, this recipe is sure to please. Find it, along with four more fast weeknight meals, by downloading a free sample of the tablet edition.

2. Fresh Strawberry Shortcakes with Yogurt Cream. Spring means strawberries. Those red little berries provide a veritable novella's worth of health benefits—an excellent source of vitamin C, they reduce inflammation, help fight bad cholesterol, good source for fiber—but let's face it, we eat them because they are so delicious. And they really shine when utilized in sinful-dessert fashion. This recipe makeover gives you the allusion of stepping out on your diet or calorie-counting, but in actuality cuts almost 500 calories off the classic recipe. TABLET BONUS: Find five more Strawberry recipes to try out this Spring.

3. Lemon-Poppyseed Pancakes with Blueberry Compote. Growing up, there was one constant at my house on Sundays: pancakes. My dad would pull out his comically-oversized spatula and whip up the most buttery, melt-in-your-mouth pancakes the world has ever known. Create some weekend nostalgia of your own this weekend with our tasty take on whole-wheat flapjacks. A teaspoon of vanilla provides a subtle kiss of vanilla while the from-scratch blueberry compote serves as the pièce de résistance that'll have the kids clamoring for pancakes every Sunday. TABLET BONUS: 10 more breakfast hits the whole family will love.
