Chicken-Butternut Tagine
Time: 30 minutes
Vegetarian Swap: Omit the chicken, double the squash, and use vegetable broth.
Serve with Pistachio Couscous: Bring ¾ cup fat-free, less-sodium chicken broth to a boil in a small saucepan. Stir in ¾ cup uncooked couscous; cover and
remove from heat. Let stand 5 minutes; fluff with a fork. Stir in 1 teaspoon grated lemon rind and ¼ cup chopped pistachios.
