Last-Minute Thanksgiving Desserts: Mini Popcorn Sundaes

Thanksgiving can be incredibly stressful. The turkey is too big (or too small). Is it done yet? Is it dressed or stuffed? Cornbread! No, traditional herb seasoned. Gotta make the gravy! Oh, wait! Brussels with or without bacon? What about the potatoes!? Lumpy or smooth...

It's just all so, and too, much. So when it comes to dessert, leave it to the last minute! This idea (and four more listed below) will take less than 30 minutes to put together, and everyone gets a slice of happy, stress-free sweetness.

Mini Popcorn Sundaes 1/2 cup vanilla bean ice cream 1 gingersnap cookie, crushed 1/4 cup low-fat Holiday Drizzle popcorn, such as Boom Chicka Pop Raspberries, for garnish Mint leaves, for garnish

1. In a small bowl, press crushed cookies into the bottom to create a crust.

2. Add popcorn and ice cream and garnish with raspberries and mint.
