Dear Quinoa,

I feel like I just discovered sliced bread.  You’re not only nutritious but also quite delicious. I prefer you as a red because reds have more fun. In your case, you brighten up my plate with the rich maroon coloring, but your white cousin gets the job done just the same (albeit without the colorful fanfare.)  I’ve thoroughly enjoyed your versatility—be it within stuffed peppers; with black beans, sautéed onions, and corn; or just as a side dish with chicken—I haven’t found a meal that I didn’t like.  So, I ask anyone reading this to share their love and favorite quinoa dishes with me so I can continue to infuse it into my diet.  Thanks!
