Brussels sprouts have come a long way in the past decade or so. Before then, they were hardly beloved; squishy, overcooked versions defined most folks' sprout experience. Now, though, Brussels sprouts are adored for their earthy and slightly sweet flavor (when properly cooked), whether sautéed, quick braised, roasted, or raw.
