We’ve assembled a task force of staff from our Birmingham offices, which include sister brands Southern Living, Coastal Living, MyRecipes, and Oxmoor House, to try the Cooking Light Diet for 3 months and blog about it. Here’s what they’re saying.

I started the Cooking Light Diet about a month ago in hopes of getting my wife and I to start cooking more. With busy schedules, we both had the same excuses that so many people do about not having time or being too tired to take the time to feed our bodies with healthy satisfying foods. Even worse? After years of living as vegetarians we were mostly only eating processed foods like veggie burgers, pastas, and not dogs. After only the first week of the Diet we happily made big changes in our lifestyles and have even formed new traditions at home.

The first week was so exciting! Because most of the dinner recipes make enough for four to six people, we decided that it made sense for us to only cook three dinners a week. That left us enough leftovers for other dinners and some lunches throughout the week if we also included one of two other options. For breakfasts during the week we decided to stick with easier options, like eggs and toast with milk or Greek yogurt with fruit. But when Saturday came around we tried a new recipe that we both feel in love with... Cooking Light's Oatmeal Pancakes. They're our new weekend tradition. We love them so much we even invited friends over for brunch one weekend so that they could give them a try!

So far we have really enjoyed most of the recipes. They have been easy to prepare and delicious. I have enjoyed learning new techniques, and I feel as though I am truly learning how to feed my body as a vegetarian without relying on processed foods. Every week we are looking forward to trying new dishes. I am excited to see how this goes, and even though I do not own a scale and cannot without a doubt say that I have lost weight, I definitely feel as though I have. My clothes are a bit looser, and I have had friends and coworkers notice!
