A romantic dinner for two can be as simple as steak, roasted asparagus, a side of whole grains, and a delicious glass of something red and sumptuous. So when it comes to dessert, your options should be just as tempting and delicious. Here's the problem with desserts, however: Most of them serve eight or more. While that's great for Thanksgiving or Christmas, it's not ideal for Valentine's Day. After all, it's just you and your bae. You need a dessert that's as special and unique as the two of you. This week, we'll share all of our favorite desserts for two.
Cupcakes are some of the sweetest treats you can enjoy on a special Valentine's Day evening. Too bad most recipes make 12 or more! Don't waste batter or cupcakes, and whip up these cupcakes for two instead. Not a fan of cherry extract? Feel free to leave it out. The cupcakes will be delicious sans the flavoring!
Chocolate Cherry Cupcakes for Two
- 3 tablespoons all purpose flour
- 2 tablespoons sugar
- 1 tablespoon cocoa powder
- 1/4 teaspoon baking soda
- 3 tablespoons reduced-fat chocolate milk
- 1 tablespoon canola oil
- 1/2 teaspoon cherry extract
- 1 tablespoon semisweet chocolate chips, melted
- 2 cherries, for garnish
1. Preheat oven to 350°F and line two portions of a muffin tin with liners. Sift together flour, sugar, cocoa powder, and baking soda in a bowl.
2. Stir in chocolate milk, oil and cherry extract. Mix until the batter is well incorporated and divide batter into the two liners. Bake for 10-12 minutes, or until a toothpick comes out inserted in center comes out clean. Cool on a wire rack for 10 minutes.
3. Spread half of the melted chocolate on each cupcake and garnish with a cherry.
