I’ve been a vegetarian for about 13 years now, and it’s always been tricky to throw together a high-protein meal without a lot of preparation or, so I thought. Sure, I can open up a can of beans or sprinkle some cheese over my lunch before I head out the door. But I’m looking for something truly hearty, flavorful, and easy. Something I can add to my ordinary vegetable salad in the morning that keeps me excited to eat by lunchtime—something like a meatless version of, oh, I don't know, rotisserie chicken.

They are the answer to my meatless rotisserie prayers. Gone are the days where I had to press a block of tofu just to achieve a palatable texture. I will no longer need to season and bake chunks of tofu before Monday morning, only to have them turn mushy and flavorless in the fridge during the week.

After I poured myself a literal cup-full of tofu cubes to munch on at my desk, I found these vegan and gluten free squares were a hit among staffers—even the omnivores.

The balsamic vinaigrette is a little sweet and fruity, and would be especially good with other balsamic-infused veggies or in a salad with a vinaigrette. The garlic & herb has a strong garlic and oregano flavor with undertones from the onion powder, basil, and black pepper. It would be especially great to top a Greek salad.

These perfect bites will be delicious in anything you’d normally toss rotisserie chicken onto. We’re dreaming about adding these to all of our favorite vegetarian meals like salads, pastas, grain bowls, fried rice, and even mixed into stir frys.
