Our version cuts out nearly every one of those steps and lets the slow cooker do the work. The result? Meltingly tender beef and an incredibly rich base. A note on herbs here: dried are better in the slow cooker because they release their flavor slowly during cooking. Use fresh herbs at the end. The stew would be delicious on its own, but a bed of hot cooked egg noodles allows you to sop up the sauce.
