Monday: For a fun twist on Meatless Monday, try brinner—breakfast for dinner. Our Whole Wheat Buttermilk Pancakes are a classic, an absolute reader favorite, cooking up fluffy and tender every time. Pair with easy Fruit Salad with Citrus-Mint Dressing, and you’ve got a no-fail family-friendly meal. If you want a meaty element, cook up some frozen meatless breakfast sausages (like those from MorningStar Farms—I’m a big fan).
Tuesday: Make sandwich night an event with Prosciutto, Fresh Fig, and Manchego Sandwiches—every bit as beautiful and delicious as something you’d order at a restaurant. The combination is irresistible: salty prosciutto and Manchego cheese combined with sweet figs and fig jam. Malted milk powder and hot fudge sauce boost store-bought ice cream here—the pie is just plain ol’ good. It does need some time to set up in the fridge, so it’s not a quickie. But it’s super-easy and a dessert your family will love.
