Monday: Summer is on its way out the door, but there's still plenty of peak produce to be enjoyed. Summer Squash and Corn Chowder combines yellow squash with sweet fresh corn in a comforting chowder, perfect for breezier nights. Crispy bacon, shredded cheddar cheese, and a sprinkle of green onions provide that classic loaded chowder feel. Serve with the last of the season's tomatoes in a super simple Tarragon-Tomato Salad.
Tuesday: If fish fillets are your go-to seafood during the week, give lump crab meat a try with crispy Crab Cakes with Spicy Remoulade. The cakes can sear in the pan while you mix together the remoulade sauce and toss a fresh Mixed Greens Salad to serve alongside.
Wednesday: Just 5 ingredients are all you need for this restaurant-worthy Meltingly Tender Chicken with Miso, Ginger, and Carrots. It also comes together in one pan--the chicken thighs render their fat which slowly cooks the carrots. Add a sixth ingredient for a quick Sesame Broccolini side. Just sauté in sesame oil and top with sesame seeds.Squash Ribbon Pasta with Herb Cream Sauce is everything you want in a late summer pasta--easy, full of color, and ready in 30 minutes. A quick dip in the pasta cooking water removes the bite from fresh red onion, and draining the hot water over squash ribbons softens them just enough. Serve with a Spinach and Radicchio Salad with Lemon Vinaigrette for even more gorgeous color.
Friday: Looking for a twist on burger night? We've combined the classic Italian appetizer with seared beef patties in these Bruschetta Burgers; think tomato, basil, melted mozzarella, and toasted rustic Italian bread. Roasted Potato Wedges are so simple and so delicious.
