Don’t let their long history intimidate you, though–these healthy tamale recipes require patience and time but are well-worth the effort in the kitchen.

First up are our Chipotle Pork Tamales with Cilantro-Lime Crema. These authentic pork tamales are bursting with flavor and serve as a wonderful gift for loved ones. For gift giving, assemble and steam tamales. Cool and freeze, wrapped in husks, in an airtight container, and attach a note about reheating.

Beef Tamales

Pork is the traditional filling for tamales in New Mexico, but we chose beef filling for these tamales to mix things up. Adjust the ground chile for more or less heat as you prefer. If this recipe makes more tamales than you need, freeze for up to a month.
