Rum-Raisin Rice Pudding
Combine ½ cup raisins and ¼ cup rum in a microwave-safe bowl. Microwave at HIGH 2 minutes; let stand 5 minutes. Stir raisin
mixture, 2 (3.5-ounce) vanilla pudding snack cups, 1/3 cup toasted sliced almonds, ¼ teaspoon ground cinnamon, and a dash
of ground nutmeg into rice.
