From May through July, seafood enthusiasts can feast on beloved soft-shell crab. During this time of year, blue-shell crabs 'molt' their hard exterior and become soft enough for eating whole. With a naturally rich flavor, soft-shell crab shines in both simple or decadent recipes. Below are five of our favorites:

Soft-Shell Crab Sandwiches

Sandwiched between tender French bread, this soft-shell crab sandwich just sings of summer. Packed with flavor thanks to a dash of Old Bay seasoning and tangy lemon-tartar sauce, it's sure to become a family favorite.

Grilled Soft-Shell Crab and Pineapple Salad with Watercress

Rich spiced rum and tangy pineapple juice create the ultimate soft-shell crab marinade. Pair with a flavorful salad to round out the plate. Peppery watercress is tamed by the sweet-tart sauce and the creamy avocado.

Coconut-Crusted Soft-Shell Crab with Mango Chutney

The technique of sautéeing the soft-shell crabs first lends to a tender inside with a crunchy coconut topping thanks to broiling afterwards. Serve over jasmine rice with mango chutney on the side.

Here is the ultimate basic recipe for cooking soft-shell crabs. With just five ingredients, it's hard to find a simpler way to eat this delicious seafood. If you're looking for something a bit more complex, you can always vary it by adding cayenne pepper, garlic powder, or other seasonings to the flour.

Cajun-Spiced Soft-Shell Crab Sandwich with Yellow Pepper and Caper Aioli

This is a great first recipe for those timid about cooking soft-shell crabs. Simply sprinkle the crabs with Cajun seasoning, dredge in breadcrumbs, and cook in a skillet for about 6 minutes. Serve on Italian bread and top with a creamy bell pepper-mayonnaise sauce.
