These scrambled egg stir-ins are an easy way to add fresh produce, extra protein, and fiber to the most important meal of the day. By utilizing pantry items, you can whip up an impressive and satisfying breakfast in a matter of minutes that will keep you energized all day long. These scrambles are loose flavor suggestions and can easily be adjusted depending on the number of servings. 

Fresh Herb and Goat Cheese Scramble: 

Mince fresh parsley, chives, and basil. Scramble eggs in a bowl with a little salt and pepper. Add eggs to a non-stick skillet at medium heat and stir with a wooden spoon. Add herbs and cheese right before removing eggs from the heat.

Huevos Rancheros Inspired-Scramble: 

Heat olive oil in a non-stick skillet on medium-high heat and add chopped onions, sliced bell peppers, and minced garlic. Add a pinch of cumin and salt. Sauté until soft. Scramble eggs in a bowl with a little salt and pepper and add eggs to the pan. Serve with sliced avocado, cilantro, and queso fresco. 

Denver Inspired-Scramble:

Dice ham and add to a non-stick skillet on medium-high heat. Add sliced bell peppers and sauté until soft. Scramble eggs in a bowl with a little salt and pepper and add eggs to the pan. Add shredded Monterey Jack cheese right before removing eggs from the heat. 

Mediterranean Scramble: 

Chop zucchini, onions, and bell peppers. Add to a non-stick skillet on medium-high heat with olive oil. Add a pinch of dried oregano. Sauté until soft. Scramble eggs in a bowl with a little salt and pepper and add eggs to the pan. Add crumbled Feta cheese right before removing eggs from the heat. Serve with diced tomatoes. 

Kale and Mushroom Scramble: 

Halve button mushrooms. Add to a non-stick skillet on medium heat with olive oil and minced garlic. Sauté until soft and add shredded kale. Scramble eggs in a bowl with a little salt and pepper and add eggs to the pan. Sprinkle with chili flakes. 

Spinach Pesto Scramble: 

Heat olive oil in a non-stick skillet on medium heat and add minced garlic. Add a handful of spinach and sauté until soft. Scramble eggs in a bowl with a little salt and pepper and add eggs to the pan. Add shredded Parmesan cheese and chopped basil right before removing eggs from the heat.
