Shaved Summer Squash Salad with Prosciutto Crisps

A sprinkling of salt brings out the flavor and helps put a fine curl on the squash. Ricotta salata is an Italian sheep’s milk cheese: At its best, it’s dense, crumbly, earthy, and milky.
