Grown-ups and children alike will love these cool ice-cream sandwiches.

The ice-cream sandwich is the stuff from which some of my fondest memories of childhood were made. As I grew up, I discovered that other flavors could please my palate. I learned about the classic combination of peppermint and chocolate from Girl Scout cookies. By the campfire, I tasted sticky yet yummy s'mores for the first time and developed a love for the contrast of the crisp graham crackers with the smooth melted marshmallows and chocolate. And many days after school, I savored the bananas with peanut butter that my mom gave us as a snack.

More years than I care to admit have passed since that day on the beach, but the memories are as clear as yesterday. And I still love ice-cream sandwiches, especially the ones that suit my adult tastes while indulging the kid inside. Think Banana Split Ice-Cream Sandwiches, Coconut Cream Pies, or S'mores Sandwiches. All you have to do to create one of these frozen treats of your own is make one component—either the cookies or the ice cream—assemble, and enjoy.

Ice-Cream Sandwiches Made Easy
Chilling or freezing cookie dough (or batter) may seem time-consuming, but don't skip this step. It makes the sticky dough easier to handle and helps the cookies hold their shape as they bake.

To soften ice cream, let it stand at room temperature for about 30 minutes. Use a large bowl and a wooden spoon to stir ingredients into store-bought ice cream, or a stand mixer does the trick quickly.

Some sorbets are smooth and creamy enough to spread straight from the freezer. If yours is not soft enough to spread, let it stand at room temperature for 20 minutes.

These ice-cream sandwiches taste great and can be made ahead. With the exception of the Banana Split Ice-Cream Sandwiches, you make the recipe, wrap the sandwiches tightly in plastic wrap, and store them in your freezer until you're ready to eat them.
