Cut dough into 8 (8 × ½-inch) strips. Arrange dough on a baking sheet coated with cooking spray. Bake at 425° for 8 minutes. Place 1 ounce chopped semisweet chocolate in a zip-top plastic bag; microwave at HIGH for 1 minute. Snip a tiny hole in 1 corner of bag; drizzle chocolate over breadsticks. Sprinkle with 1/8 teaspoon fine sea salt; let stand until set.
