This fresh, bright salad takes Thanksgiving leftovers on a trip East. And after the big day, you'll welcome its lightness.
Faux won-ton soup
Combine 2 cups fat-free, less-sodium chicken broth, 1 cup water, 1 tablespoon low-sodium soy sauce, and 1/2 teaspoon bottled ground fresh ginger in a saucepan; bring to a boil. Add half of a (9-ounce)package fresh cheese tortellini; reduce heat, and simmer for 6 minutes or until done. Sprinkle with 2 tablespoons chopped fresh cilantro.
Rice topped with toasted sesame seeds
1. Bring water for rice to a boil
2. While rice cooks:
• Bring broth mixture for soup to a boil
• Blend dressing ingredients
3. While soup simmers, prepare salad ingredients and toss with dressing
