Arugula Salad with Goat Cheese, Bacon, and Balsamic-Fig Dressing

The sweet figs in the balsamic dressing and the tangy goat cheese are a strong pairing with the peppery greens and the salty bite of bacon. Make the dressing up to three days ahead, and refrigerate.
