When you want to shave preparation time off a recipe, one trick is to start with boneless cuts of meat that cook quickly. Use thin chicken breast cutlets in Chicken Scaloppine over Broccoli Rabe, and small chicken tenders that chop up quickly for Asian Chicken Noodle Soup. Another time-saver is to have your grocer do the work. Washed, bagged greens can save time in Salmon with Wilted Watercress and Balsamic Drizzle, as well as Sesame Chicken Salad. For our Curried Tofu, use precut matchstick-cut carrots from the produce section to keep preparation time to a minimum.
