Seared Scallops with Lemon Orzo
Scallops are a great protein for superfast dishes, as their delicate tenderness is best served when cooked fast and hot. Sear
the scallops while the orzo cooks and you can have dinner done in about 18 minutes. If you're not a scallop fan, substitute
large peeled shrimp, slices of pork tenderloin, or small filet mignon.
