Melon and Prosciutto Salad with Parmigiano-Reggiano

Melon and Prosciutto Salad with Parmigiano-Reggiano

Make this salad the centerpiece of an easy antipasto meal. Serve with a platter of olives, roasted peppers, sliced tomatoes, mozzarella cheese, and, if you're feeling ambitious, add your favorite grilled or roasted veggies, too.
