with beef; try to find some for this dish. The rest of the flavors here―pungent fish sauce, spicy red curry, bright lime juice―are
also authentically Thai, creating a delicate balance of salty, spicy, sweet, and tart. If asparagus is out of season, replace
it with fresh broccoli or spinach.
