Shrimp and Herb Salad

Time: 30 minutes

Flavor Hit: Use fresh herbs to perk up ordinary mixed greens.

Serve with Garlic-Parmesan Toasts: Preheat broiler to high. Place 4 (1-ounce) slices French bread on a baking sheet. Broil 1 minute or until lightly toasted. Brush each slice with ½ teaspoon olive oil; rub slices with cut side of a halved garlic clove. Top each slice evenly with 1½ teaspoons grated fresh Parmigiano-Reggiano cheese.
