Seared Scallops and Herb Butter Sauce

Time: 40 minutes

Technique Tip: Whisk butter gradually into the sauce so it emulsifies.

Serve with Roasted Green Beans: Preheat oven to 450°. Combine ½ pound haricots verts, trimmed; ½ pound wax beans, trimmed; ½ cup thinly sliced shallots; 1 tablespoon olive oil; and ¼ teaspoon kosher salt on a foil-lined baking sheet. Roast at 450° for 10 minutes or until crisp-tender. Serves 4 (about 3/4 cup) CALORIES 84; FAT 3.6g (sat 0.5g); SODIUM 130mg
