Chicken Scaloppine with Broccoli Rabe
If you can’t find chicken cutlets, place chicken breast halves between two sheets of heavy-duty plastic wrap, and pound to
1⁄4-inch thickness using a meat mallet. Broccoli florets can be substituted for broccoli rabe; the cooking time may be a little
longer, though. Add a side of roasted potato wedges and carrots, if desired.
