Rotisserie chicken, canned enchilada sauce, and even preshredded cheese shave time off this recipe; all you have to do is briefly cook the onions and peppers, assemble, and melt the cheese. Making enchiladas from scratch might take hours. This recipe takes about 15 minutes.
