There's a lot to these simple-sounding sandwiches, but that doesn't mean they take more than 10 minutes to make. Chickpeas, bell pepper, olives, onion, and cilantro join chicken in a tangy lemon-cumin-yogurt dressing. This is a great recipe to make meatless, as well: Just replace the chicken with cubes of firm tofu.
