Facts About Fennel

Divine either raw or cooked, some fennel varieties are grown for their bulbs, while others are grown more for their foliage. Be certain of which variety you're picking up (or growing!) before you incorporate it into your favorite dish. (See our Guide to Fennel.)

First up is our Warm White Beans with Roasted Fennel. If you’re anise-averse, roasting it may be what it takes to convert you. The caramelized flavors mixed with hearty beans and spinach create a filling and nutritious cool-weather dish. Try it with your own dried beans rehydrated and cooked for a richer flavor. Substitute kale if you don’t have fresh spinach on hand.
