It's almost here. The Big Game. Super Bowl Sunday. The Final Throwdown. Sunday night, the New England Patriots take on defending Super Bowl Champions the Seattle Seahawks.

That means it's also time for a bi-coastal Sandwich Showdown. For you Seattle fanatics, the Open-Faced Salmon and Avocado BLTs. Tender salmon fillets are cooked in bacon drippings to soak up every last ounce of bacon-y flavor. Avocado slices boosts the typical BLT into a dreamy, creamy world. We serve this sandwich open-faced (on one piece of bread), so it might be more of a fork-and-knife sandwich than a grab-with-your-hands one.

And on the other sideline, the New England Patriots. I hear that New Englanders take their lobster rolls pretty seriously. (I can't blame them. We Southerners are equally fierce about our barbecue.) In these Lobster Salad Rolls with Shaved Fennel and Citrus, buttery lobster meat is tossed in a creamy citrusy-fennel slaw. (Fennel adds notes of earthy licorice.) Fresh tarragon—don't skip it—doubles down on the licorice-anise notes. It's the perfect complement to the sweet lobster meat.
