Serve with Grilled Pepper, Onion, and Blue Cheese Salad: Preheat grill to medium-high heat. Place 2 Anaheim chiles, 2 quartered red bell peppers, and ½ medium red onion, cut into 1-inch wedges, on grill rack coated with cooking spray. Grill 10 minutes, turning occasionally. Remove tops and seeds from Anaheim; thinly slice. Combine peppers, onion, 2 teaspoons sherry vinegar, 2 teaspoons olive oil, ¼ teaspoon freshly ground black pepper, and a dash of kosher salt; toss to coat.
