Ground Lamb and Hummus Pita "Pizzas"

Simple Sub: Try ground sirloin in place of the lamb.
Serve with Tomato, Sweet Onion, and Parsley Salad: Combine 1½ teaspoons extra-virgin olive oil, 1 teaspoon red wine vinegar, 1/8 teaspoon salt, and 1/8 teaspoon freshly ground black pepper in a medium bowl; stir with a whisk. Add 1½ cups halved grape tomatoes, ½ cup thinly sliced Vidalia or other sweet onion, and ½ cup chopped fresh flat-leaf parsley to bowl; toss to coat.
