Beef Tagine with Butternut Squash

Time: 40 minutes

Simple Sub: Use 1 medium onion, cut into thin wedges in place of shallots.

Serve with Scallion Couscous: Bring 3/4 cup fat-free, lower-sodium chicken broth and 1/2 cup water to a boil in a medium saucepan. Gradually stir in 1 cup uncooked couscous. Remove from heat; cover and let stand 5 minutes. Fluff couscous with a fork. Stir in 1/3 cup chopped green onions. Yield: 4 servings. CALORIES 169; FAT 0.3g (sat 0.1g); SODIUM 80mg
