I'm sure I don't need to remind you it's Cinco de Mayo. I may need to remind you it's also Oyster Day, which seems like bad planning on the part of the oyster folks and probably explains why there's also a National Oyster Day on August 5 (not an "R" month, but at least there's not much other competition).

I was thinking of touting a party-perfect guacamole recipe, but because the Cinco falls on a Lunes this year, I assume you got all the celebration out of your system over the weekend and are now up for some Mexican-themed weeknight deliciousness. Here's just the thing: Chicken and Guacamole Tostadas. This way, you're still covered in the guac department, and with a little rotisserie chicken you can pull dinner together in 20 minutes. ¬°Buen provecho!
