Chicken Tonight―and Tomorrow

A bird on the grill takes flight in sandwiches and salads to go.

There is something inherently rewarding about grilling a chicken while you sit on your deck or patio sipping a cool drink. Perhaps it's the knowledge that as you enjoy the warm evening and the sights and sounds of another day coming to a close, you're also getting a jump-start on the week―because the leftovers from dinner can be turned into an array of packable midday meals.

Gain further advantage by serving side dishes that can also be used for lunches later in the week. Grill a double batch of eggplant slices or zucchini to have with the chicken, and tuck the leftovers into sandwiches for lunch. Or cook extra pasta so there's plenty to enjoy at dinner, as well as to combine with leftover meat for a simple pasta salad the next day.
