Dress up your cooked fresh seafood with these simple, quick topping ideas.

Crispy breadcumbs: Toss 1/4 cup panko breadcrumbs or fresh breadcrumbs with 2 teaspoons olive oil to moisten; toast crumb mixture in a skillet over medium heat until golden brown. Stir in a 1/2 teaspoon grated lemon rind and 1 teaspoon chopped fresh parsley or chives; spoon over cooked fish.

Fresh tomato relish: Combine 1/2 cup chopped fresh tomato, 2 tablespoons chopped olives, 1 tablespoon red wine vinegar, 1 tablespoon extra-virgin olive oil, 2 teaspoons rinsed and drained capers, 2 teaspoons minced shallots, 2 teaspoons chopped fresh thyme, 1 teaspoon minced garlic,  1/4 teaspoon kosher salt, and 1/4 teaspoon freshly ground pepper. Let stand 15 minutes. Serve room temperature or cook for 30 seconds over medium heat or until warmed through.

Quick vinaigrette: Combine 2 tablespoons extra-virgin olive oil, 2 tablespoons white wine vinegar, 1 teaspoon chopped fresh thyme, 1/4 teaspoon freshly ground pepper, and 1/8 teaspoon kosher salt; drizzle over cooked seafood.

Salmoriglio: A lemony, herby, classic Sicilian fish sauce.
