"I was excited to make this recipe, especially since it includes one of my most favorite ingredients—quinoa. I've used quinoa in place of rice before but have never used it in a breakfast dish. This recipe was really easy to make and smelled amazing while cooking. I am not a huge fan of coconut so I was not sure I would like it, but I was surprised—this dish tasted really good. However, you can also try it with almond milk and top it with toasted slivered almonds. I would also recommend using any seasonal fruit and switching it up often. The quinoa is sweet and creamy, so you can use a tart fruit as a flavor contrast."
