A BRIGHT, TART WHITE

Crisp, sharp whites with acidity and a citrusy bite can match the pungent flavors of a classic Caesar dressing.

Try a Vinho Verde from Portugal. These pert, incisive whites counter the assertive lemon, anchovy, and garlic in the dressing while accentuating the juicy chicken and creamy Parmesan cheese. Plus: Slight effervescence complements the crunch of romaine.

A CRISP, FRUITY ROSÉ

With characteristics of both whites and reds, a dry blush packs plenty of versatility to balance the zesty dressing and play off the mild chicken.

For a classic Caesar salad, choose a bone-dry rosé. Unlike sweeter blush wines, these contain a refreshing, flinty acidity that echoes the salty tang of the dressing, while juicy, berry-floral notes enhance the light, savory flavors of grilled chicken.
