Mom deserves it all on Mother’s Day, but you don’t need to go through a lot of fuss to give her a meal she’ll really love. Instead of breakfast in bed (do moms even really enjoy that? Crumbs and syrup everywhere!), gather around the skillet at the table for a pillow-y, tender, gorgeous Dutch baby, basically a giant pancake with a deep center for piling on all the fresh toppings.

This Dutch Baby with Strawberries and Pistachios takes no time to make and is almost completely hands off; you’ll have plenty of time to count the ways you appreciate mom while the Dutch baby bakes in the oven. This spring version is topped with fresh strawberries and pistachios, but you could fill with any of mom’s favorites, like raspberries, sautéed pears, or a drizzle of Nutella.

You could serve with a side of soft-scrambled eggs and bacon, but this dish is honestly fantastic on its own. Kids can help by adding the batter ingredients to the blender, cutting up strawberries with a butter knife, or giving the pancake a final dusting of powdered sugar.
