Take Two: Flour & Corn Tortillas

Flour tortillas are prized for their mild flavor and softness, while corn tortillas offer an alternative in taste and texture. Either can serve as casing for fajitas or burritos, a base for chilaquiles, or be baked into crisp homemade chips. A standard six-inch corn tortilla contains about half the fat and calories and one fourth the sodium of a similar-sized flour tortilla. In traditional Mexican tortillas, the fat in either version comes from lard, but many brands now use vegetable shortening, so be sure to look for those made without trans fats.
