Summer is the perfect season for refreshing, crisp, vibrant salads. This Chicken, Avocado, and Peanut Salad combines creamy avocado with fresh carrot and onion, grilled chicken, and filling peanuts. Make your own vinaigrette (recipe below) to cut down on sugar, salt, and fat.

 

Grapefruit-Chive Vinaigrette3 tablespoons dark sesame oil + 2 teaspoons grapefruit juice + 1 teaspoon rice vinegar + ¼ teaspoon kosher salt + ¼ teaspoon pepper + 2 teaspoons chopped fresh chives
