Asian Beef-Noodle Salad with fresh fruit salad (serves 4) Total Time: 25 Minutes Game Plan: 1. While the water for the noodles comes to a boil, cut the fruit for the side salad. 2. While noodles stand: • Finish fruit salad 3. While beef mixture heats in microwave, tear spinach and chop cilantro. Quick Tips: Bottled fresh ground ginger is a speedy way to invigorate this salad; look for it in the produce sections of larger supermarkets. You may also substitute an equal amount of grated fresh ginger. Fresh fruit salad: Combine 1 mango, cut into 1/2-inch cubes; 1 Granny Smith apple, cut into 1/2-inch cubes; 1 sliced banana; and 1 cup seedless grapes.
