Roast Chicken Sandwich Menu

Roast Chicken-and-Cranberry Sandwiches and ripe tomato salad (serves 4)

Total Time: 20 minutes

Game Plan:

1. Microwave vinaigrette.

2 While vinaigrette cools:

• Prepare salad ingredients
• Combine cream cheese and chutney
• Slice radishes
• Trim arugula
• Chop chicken

3. Assemble salads.

Quick Tips:

To dissolve sugar in liquid, cook the mixture in the microwave for a minute or two until it comes just to a boil. This beats stirring the mixture constantly until the granules disappear.

Also Serve:

Ripe tomato salad: Combine 2 tablespoons balsamic vinegar and 2 tablespoons brown sugar; microwave at medium (50percent power) until mixture comes to a boil (about 1 1/2 to 2 minutes). Let stand until cool and slightly thick (about 5 minutes). Place 3/4 cup salad greens on each of 4 plates. Slice 1 large yellow and 1 large red tomato; arrange on top of salad greens. Sprinkle 1/4 teaspoon salt evenly over tomatoes. Drizzle with vinaigrette. Sprinkle evenly with 1 tablespoon pine nuts, if desired
