Spicy Pork-and-Bell Pepper Taco and black bean salad for four

Game Plan:

1. While oil heats in skillet, cut pork into 1/2-inch strips.

2. Prepare ingredients while pork cooks:

• Drain beans,
• Chop green onions, tomato, and cilantro,
• Slice bell peppersand shred cheese.

Quick Tips:

To reduce prep time even more, opt for preshredded cheese, and use a thawed 16-ounce package of frozen pepper stir-fry with yellow, green, and red bell peppers and onions in place of the fresh bell peppers.

Black bean salad: Combine 1 (15-ounce) can black beans, drained and rinsed; 2 chopped green onions; 1 chopped plum tomato; and 1 tablespoon each of chopped fresh cilantro, fresh lime juice, and olive oil.
