Menu (serves 4)

Greek-Style Stuffed Eggplant

Herbed goat cheese toasts: Combine 1/2 cup crumbled goat cheese, 3/4 teaspoon dried oregano, 1/2 teaspoon garlic powder, 1/4 teaspoon paprika, and 1/8 teaspoon salt; sprinkle evenly over 8 (1-ounce) slices French bread. Broil 2 minutes or until lightly browned.

Game Plan

1. Remove eggplant pulp

2. While eggplant shells cook: Preheat broiler; Slice bread; Prepare breadcrumb mixture

3. While eggplant filling cooks:Prepare toasts

4. Broil stuffed eggplant shells

Quick Tip

If you don't want to make them fresh, use half the amount of breadcrumbs that come in a can.
